Chicken & Broccoli With Cauliflower Cheese Sauce

A few weeks ago I posted this pic on Instagram to show what we were having for dinner.  A number of you have asked for the recipe.  Unfortunately, there was no recipe at the time, so I have taken the time to assemble the recipe.  I hope you like this tried and true family recipe which is a favorite in our house not only because it taste good, but it is also versatile, packed with veggies, kiddy approved and above all else, QUICK!

Chicken & Broccoli                                                       Print Recipe
w/ Cauliflower Cheese Sauce

Cauliflower Sauce Ingredients:
1 med. Head of Cauliflower
1/4 c. Of Shredded Cheddar Cheese
1/2 c. Chicken or Vegetable Stock
Salt and Pepper to taste

Remaining Ingredients:
2 Crowns of Broccoli
1/4 c. Chicken or Vegetable Stock
2 Cooked Chicken Breasts

Sauce Directions:
Clean and remove blemishes. Chop into medium chunks and steam in Chicken or Vegetable Stock until tender.
Once tender, remove from pot with slotted spoon and place into food processor.  Keep remain stock.
In the processor, add additional spices and cheese.  Blend until smooth and creamy.  If sauce is too thick, add a little of the remaining stock until you reach your desired consistency.

Casserole Directions:
Place chopped chicken and gently steamed broccoli in a bowl.
Stir in the cauliflower cheese sauce
You can serve as is or transfer the mixture to a baking pan and add toppings such as cheese, bread crumbs or bacon bits.
Bake in oven at 450 degrees until cheese melts and top browns. Approximately 15-20 mins.

For quickness, I tend to use a purchased roasted chicken and remove the skin and fat.  It's great because it is already seasoned and I don't have to roast it, lol!

It is hard to believe you can get a rich and creamy cheese sauce from only a quarter cup of cheese but it is true.  The best benefit is that the Cauliflower Cheese Sauce is:

  1. a leaner alternative
  2. a great substitute to use in any of your recipes that call for cheese sauce,
  3. And makes an excellent Alfredo Sauce when you substitute the cheddar for Parmesan cheese.
Try experimenting by adding rice or pasta and see what combinations you can come up with.

Either way, my daughter likes it and it it as a great way to get the veggies in.
