Chicken & Broccoli Print Recipe
Cauliflower Sauce Ingredients:
1/4 c. Of Shredded Cheddar Cheese
1/2 c. Chicken or Vegetable Stock
Salt and Pepper to taste
2 Crowns of Broccoli
1/4 c. Chicken or Vegetable Stock
2 Cooked Chicken Breasts
Clean and remove blemishes. Chop into medium chunks and steam in Chicken or Vegetable Stock until tender.
Once tender, remove from pot with slotted spoon and place into food processor. Keep remain stock.
In the processor, add additional spices and cheese. Blend until smooth and creamy. If sauce is too thick, add a little of the remaining stock until you reach your desired consistency.
Place chopped chicken and gently steamed broccoli in a bowl.
Stir in the cauliflower cheese sauce
You can serve as is or transfer the mixture to a baking pan and add toppings such as cheese, bread crumbs or bacon bits.
Bake in oven at 450 degrees until cheese melts and top browns. Approximately 15-20 mins.

For quickness, I tend to use a purchased roasted chicken and remove the skin and fat. It's great because it is already seasoned and I don't have to roast it, lol!
It is hard to believe you can get a rich and creamy cheese sauce from only a quarter cup of cheese but it is true. The best benefit is that the Cauliflower Cheese Sauce is:
leaner alternative a great substitute to use in any of your recipes that call for cheese sauce, a
- And makes an excellent Alfredo Sauce when you substitute the cheddar for Parmesan cheese.
Either way, my daughter likes it and it it as a great way to get the veggies in.
